Since we last spoke.....
Wouldn't you know we had "dessert" first for April fools.... Gotta love the chocolate icecream cones (refried beans with tostada shell cones) with whip cream (sour cream) and a cherry (cherry tomato). Gotta love that lime sherbert (guacamole). Do we just love food in this house or what?
After "dessert" we had our "main meal". Hamburgers (vanilla wafers, grasshopper mint cookies and frosting), chicken strips (twix covered in coconut), and french fries (sugar dusted roll).Relief Society was a dessert fest where each person brought a dessert to share that "described" them. Lani made a beehive with bees.... Very cute. She is one of the most industrious, always up to something good, people I have ever met. Did I mention to you that we like food in this household?
I can't believe that we (we in the sense of "she" mostly and "me" not so much)are sooooo skinny for how much we like food. Some of us are skinnier than others.....
12 years of wonderful (if you ask me) marriage. We took a trip to Montana/Northern Idaho for our anniversary. It was a blast to ditch the kids (thanks Nate and Carol, you survived!) and figure out, after 12 years of marriage, if we were going to finally "grow up" and settle down.
Life is fabulous. I am the most blessed person on the planet. I don't completely comprehend why I am so blessed.... if my wife get on here and sees this post she will tell you that when I think about food and Mrs. C, I get very happy and go on and on about how good life is.

While up north we finally got to visit the "Prince" Conner, for the first time. He is so cute and his dad isn't that bad looking either....Conner and I hit it off right away. I am very happy to say I was found in his good graces to be an acceptable member of the family (distant tho it be).
I pinned on Major this week (after being selected like 1.5 years ago). My co surgeon's wife made this delicious cake (I know another food reference).
It was hard to restrain myself. I guess my military officer's bearing (which means you shouldn't be too much of a cut up or nerd or silly because it doesn't reflect well on the office which one holds) needs some work.... at least that is what my superiors keep tell me. It is hard to act respectable, noble, and honorable when you grew up in a no stoplight town, peeing off your front porch (which was a plywood porch on the front of the trailer), catching grasshoppers, catching crawdads in the ditch, and wearing boots to church...... I'm a lost cause.

Disney Drugs.... Kids on Crack
I pretty much escaped the souvenir/food money pit trap at Disney until I found these two shirts and then I couldn't resist. My wife and kids think these shirts fit me to a teeeeeeee.....
You know it was a great trip FILLED to the brim when you come back and you have to put the baby in the hospital with croup and pneumonia. That hard schedule was hard on the baby.
The wonderful trip started with a stop in Destin Florida for a few hours on our drive to Orlando. The most beautiful beaches with the softest/finest/whitest sand I have ever seen. Hands down this is the most beautiful sand I have ever seen on a beach. At 8 am on an overcast Monday, we pretty much had the beach to ourselves for a few hours. It was magical.
The sun peaked through at times and it was very warm for being so cloudy and early.
The ocean wasn't nearly as cold as the ocean in California or Virginia where we had been before in non summer times.
Jumping for joy at the beach to start off this wonderful week.Florida, Alabama, Mississippi, Louisiana were beautiful, green, blossoming and gorgeous this time of year. No hot humidity. No dead/brown looking surroundings. Lush green, temperate and exciting. We even passed Colton's future home. Not as pretty as Tallahassee but I am so excited for Colt's next big adventure.
We arrived! Happy and excited. I don't know what it is about Disney that makes kids act like little crack addicts but they go till they pass out and then wake up for more! I think it is in the air because we brought all our own food for the entire week so I'm thinking the "kid drugs" are in the air.
Sometimes it was hard telling the characters/animals from the children.
The kids were "super" for this trip.

till they felt like puking! Mission Space was the limit for mom and Kimball. This crazy ride almost spun the food right out of them.
The Mrs did a fabulous job of bringing the greatest collection of homecooking for a whole week to Disney and it gave the needed energy for the daily binge of pure excitement.
It just about wiped us all out, we had so much fun.
Disney animals are very discerning and wise. They know which kids you should keep a safe distance from....
Aunt Carol Lynn's supershirts were a huge hit at Disney and helped us keep track of the troop. We had multiple people ask us where they could buy them at Disney. Maybe Aunt Carol should should open up a business.
It was magical. We have to thank Lani's parents and Aunt Carol for helping. The almost 1:1 adult to kid ratio kept the trip a ton of fun. We partook of the Disney magic and it wore us out. Hopefully the memories will be long lasting so we don't have to do it for another 10-12 years!I am embarking on a couple months project so my posts should slow down. Sorry. No rest for the wicked.

Mustache March
Now I know a very handsome guy who wanted to grow a mustache as an attempt to boost "work morale". Kind of like an "espirit de corps" initiative. It has inspired a bunch of others in the work arena to also grow their mustaches. It is now being affectionately called Mustache March. (full frontal view of above specimen)
In an attempt to not exclude anyone from this venture, I've even invited the women from our squadron. They aren't going to wax or bleach their mustaches this entire month. (I know, I know, I am so inclusive)
To those who shunned the opportunity at work (bunch of sour pusses) to grow their mustache, The Mustache has shunned them (with the tongue's help).
Now, can you believe that the Mrs is not excited about the 'stache? The mustache has offered a kind gesture by letting her kiss the lips and rub up against him but she is too much of a high "brow" for Mr. Mustache..... maybe if we purchased some "product" to jazz and dress up Mr. 'Stache, he'd get more feminine affection. Brigham likes to try to lick Mr. Mustache when he rubs against his face or neck. Not exactly the affection Mr. 'Stache is looking for but it is a lot better than the slap that Mr. Mustache gets when he rubs up against the face or neck of the Mrs.
Where was I for the last few months? I was gone a lot in January and February working and studying for the second part of my board examinations. In all this education/training/work adventure, I have missed a lot over the past 10-12 years. When I was gone, Brigham started walking.
The lovely Mrs spent Valentines day alone, but she got to wear her pendleton suit that her daddy bought her for valentines when she was sixteen (an annual tradition if you remember from last year). Another sacrifice of this education/training stuff.
I also "got" to miss Tal's 3rd birthday....
I wasn't there to help keep the kids out of trouble.... but if I end up passing boards, which I should find out this next week, then I will officially be DONE! Board certified Oral Maxillofacial Surgeon. My family and I are ready to be done with all this studying, tests, etc. To celebrate, we are going to Disney World this next week for spring break! My results should arrive while I am at Disney World, so if I fail, too dang bad, I am rewarding myself anyways!My cousin, whose blog I freely enjoy, thus is probably the only one who has moral authority to make me post, guilted me into posting; so you can all thank her. Otherwise, I would have waited till I got my results back from boards and some cute pictures of the kids terrorizing Disney World and its patrons.....

Great Christmas Secrets Guarded for Centuries; Now unfolded for your eyes!
Did you know that Bob the Builder was the Inn Keeper? It was left out of the Bible but the Inn was really crowded and he was hired to add on to the Inn..... a little too late I'd say....also the Angels weren't all "angels".....
some were kind of "punks" if you know what I mean and just happened to be tapped for the assignment of singing to the shepherds...
Simple Christmas, with simple gifts are the best. When you can get all the wrappers and paper for 8 people into a regular kitchen garbage bag.... you know it was GREAT!!!!!
If you are going to scrimp on "stuff", you might as well make some memories. Sea World for Christmas is a very uncrowded and fun place to help children feel like their dad isn't such a freak and a grinch :) for having a modest Christmas.
Kids hopefully will remember having fun together and maybe this kind of Christmas will be a preferable one than the ones where they can't hardly stuff the "stuff" into an already stuffed bedroom filled with the last few years of "stuff".
It is real hard work watching the kids at Sea World. Good thing Mr. Grinch (C) was well rested for the task.
San Antonio is right around 70 degrees at Christmas and the river walk is a very quaint city feature. I feel blessed that I don't live in a city and that I never will again, but some of them have some quaint draws and the river walk is a super unique attraction. We loved it and it made a very nice Christmas activity.
I am such a horrible dad. I don't buy each of my kids a drink at Wendy's. Thus they are on it like a pack of lions on a wounded antelope....
When you are the smallest lion at the "kill", you get left with the "bones".....
The third child had his 7th birthday in San Antonio and we celebrated by eating at Wendy's and then getting ice cream at Braums. Kids love ice cream even at Christmas, and Braums has fantastic ice cream!
Kids behave best when they are "properly motivated" at Christmas. Some parents tell their kids that Santa won't give them presents if they are bad. My kids don't buy it because they know that the Grinch doesn't believe in lavish gift giving at Christmas. So I found a new motivation.....I screamed to the whale trainer that when they were out of the fish-in-the-pale that I had some fighting kids that I'd be more than happy to feed to Shamu. Then like magic, happiness and love filled the arena and WALA, "good tidings and peace on earth again".....In TOTAL:
1. Free tickets to Sea World
2. Gas $1.34-1.49/gallon
3. Temporary Housing at the Air Force base for a family suite $41.50/night including tax
4. Bringing left overs/food from home and recooking them in the kitchenette-very economic
5. Eating smuggled tuna fish sandwiches at Sea World that didn't come from "dolphin free tuna"-very economic AND insensitive
6. Family togetherness instead of "stuff" at Christmas - very economic and fun
7. Obedient kids thinking that their dad will throw them into the killer whales-PRICELESS

What I like and don't like about Christmas (you're a mean one, Mr. Grinch (C)
I admit that some people (my wife and kids) think I am the modern Grinch when it comes to Christmas. My likes and don't likes about Christmas probably explain this "grinchness" that some may see in me.
After my parents were divorced when I was 12, I admit that this time of year has been very uncomfortable for me. Things could be scarce. My dad was rarely around and struggling with his own personal demons, my mom and us kids were usually the charity case of the ward. So this time of year just seem to accentuate the deficiencies in my home growing up. Then something magic happened to me as a missionary.
In Nicaragua in 1993 (my first Christmas in the mission), I was training a new companion and he was struggling mightily. I knew he was terribly homesick, frustrated with the language, missing his personal possessions (video games, his toyota pickup, his "own room", and other things). Christmas in Nicaragua was so different than anything I had ever experienced up to that point. No trees, no presents, no smells, no snow, no typical songs, lots of liquor and general debauchery. The gospel became a little tougher to teach and I am sure our "down" spirits didn't help.
I was determined to break this bad funk and so I took some money that was sent to me by some dear friends and I asked Sister Rodriguez, with whom we lived, if she had ever made cake. She got up every morning of the week, save Sunday, and made bread by hand and then carried it up the hill, on big pans to a guy who had an oven. All morning long, on her head, she carried it to bake it and then sell it throughout the day.
I gave her all the money ($50 which was almost equal to the entire amount of money we lived on for an entire month) and she got the supplies. We made about 13 cakes of all weird sizes and shapes. Christmas morning after making cakes and frosting them, my companion and I went out all over town handing out pieces to people. I'll never forget as long as I live, walking down the poor barrios with naked kids playing in the sewer water running down the middle of the dirt streets and then just handing big pieces of cake out to the stunned victims. I remember walking down the street and looking back and seeing little kids just standing there stunned, holding this big piece of cake in their little dirty hands, not knowing what it was or what to do with it. It was awesome and I realized that in this poor country (second poorest on this hemisphere) that the things I associated with a "merry Christmas", were all just materialistic things and that this whole time of Christmas misery was because I thought about what I didn't have instead of what I could do to just blow someone else away with genuine surprise and giving. I repeated it the next year right before coming home. Still, hands down, the greatest Christmas of my life were in Nicaragua with people who had really no earthy possessions.
So, still to this day, I hate buying gifts and receiving bought gifts. It is like a personal insult to the sweet experience I had way back in the mountains of Nicaragua. I like genuine love and associated giving but I can't stand to see my kids fixated on "things" or going to a store because of the commercialization of Christmas. This is the first thing that makes me the grinch. I loved Elder Uchtdorf's talk in the Christmas devotional and I had thought the same things that hopefully this year with the economy on the skids that it would temper the materialistic -"things"-frenzy that has become Christmas.
So the second thing that makes me the grinch is that I for the most part don't like all the candy and sweets of Christmas (I don't care for candy anyways and my heart is on what I do like at Christmas).
So now you all know why I am the grinch.
Now let me tell you about what I absolutely love about Christmas:
1. Sitting in front of a fire with the lights down low,with the one(s) you love, drinking hot chocolate and just being mezmorized by the warmth and flickering of the flames
2. Tamales- my dad used to make tamales around this time of year and it is my first Christmas food love. I can't give my heart away to the cheap treats of Christmas when there is something so glorious and pure about tamales at Chrismas. The smell of that corn and red chilly cooking and steaming together.
3. Citrus- I love the grapefruit for breakfast, oranges and clementines all day. The smell, the taste, the wonder of the simple pure gift of citrus at this time of year. I call this "God's Christmas Candy" because it comes this wonderous time of year.
4. Eggnog. This wonderous drink so rich and creamy with its one of a kind taste and smell.
5. A new love is my wife's Family Christmas DVD which she originally made for me 3 years ago but I was so touched by it that we decided to give it as a christmas card and now we have given it for 3 years (including this year). It is a wonderful way to relive the year for me and to remember the blessings, fun and craziness of living in this family. This is the kind of gift that can't be bought and is like "Nicaragua Cake" to me.
6. Calling up and talking to old friends and distant family and renewing that connection of love and friendship.
I don't want clothes (I hardly wear 1/10 of what is in my closet). I don't want electronics (I don't love things). My dream is to have a Christmas with absolutely no purchased item and to just sit around and listen to Christmas music and give those things that can only be created by love and thoughtfulness and not by the power of filthy lucre..... Now you know Mr. C is the new grinch!
